500g caster sugar

For the Cocktail (produces 850ml, serving 10)

Making the Cordial: Place all the items in a pot, bring to a gentle boil, agitating so the sugar melts. Then, take off the heat allowing it to cool down entirely. Pour into a clean bottle, cap it and refrigerate it chilled, it can be stored for up to a month.

Preparing the Cocktail Base: Combine the specified spirits and syrup into a sizeable container, let it rest for 60 minutes, then filter it , ideally through muslin, so it's fully clarified.

To serve: Measure 85ml of your batch mix into your stirring glass packed with ice, and stir gently for one minute until cold. Strain to a chilled martini glass or similar, decorate with a few cranberries adding the final touch with a brief mist of mandarin oil over the drink.
